Andhra Paruppu Podi Recipe | HungryForever

Andhra paruppu podi recipe or Kandi podi to be served with hot plain rice with a spoon of ghee or gingelly oil 
INGREDIENTS
INSTRUCTIONS
  1. Dry roast toor dal on medium flame stirring continuously, until it turns golden brown. Add hing, cumin seeds, curry leaves and fry for a few more minutes. Leave it to cool.
  2. Dry roast fried gram (pottukadalai in Tamil) and garlic separately. If you do not like garlic flavor, use less garlic.
  3. Heat 1/4 tsp of oil and fry red chillies. Then grind everything together coarsely with salt needed.
  4. This podi is very delicious with hot steamed rice topped with a tsp of ghee. You just have to prepare any vegetable curry or papads as a side dish for this.
RECIPE NOTES
You can prepare this podi without tur dal also. Use just fried gram and reduce the number of chillies and garlic.

Indulge yourself by making this velvety smooth, creamy cashew nut curry
INGREDIENTS
For sauteing the cashew nuts
For the gravy
INSTRUCTIONS
To saute the cashew nuts
  1. Heat the butter over a low flame in a pan.
  2. Once the butter begins to boil, add the cashew nuts.
  3. Saute until the nuts become golden.
  4. Remove and set aside.
For the gravy
  1. Saute the bay leaf over a low flame for a few seconds.
  2. Add the chopped tomatoes and ½ cup water.
  3. Stir, and allow the mixture to simmer until the tomatoes become soft.
  4. Once the tomatoes soften, remove the mixture and allow it to cool.
  5. Grind the cashew nuts to a fine powder in a blender.
  6. Set powder aside.
  7. Remove the bay leaf from the tomato gravy and blend the tomatoes into a smooth puree.
  8. Heat the 2 tbsp butter over a low flame, and add the ginger garlic paste.
  9. Saute the paste for a couple of seconds.
  10. Add the cashew powder and stir constantly until the powder becomes golden.
  11. Add the tomato puree and stir well.
  12. After 3-4 minutes add the red chilli powder, the ¾ cup of water and the green chillies.
  13. Allow the mixture to simmer on a medium heat for two minutes.
  14. Add the salt and sautéed cashew nuts.
  15. Allow the mixture to simmer for another two minutes, stirring occasionally.
  16. Add the garam masala powder, the cream and methi powder.
  17. Stir well for a minute.
  18. Remove curry from stove, pour into a serving bowl.
  19. Garnish with coriander leaves.

  2. In a large skillet, heat the oil and cook the chicken on medium heat.
  3. Cook for 5-7 minutes, stirring occasionally and remove.
  4. To the same skillet, add onions, red bell peppers, mushrooms and cook until soft.
  5. Stir in the chopped chipotle and lime juice and mix well. Season with salt and pepper.
  6. Tip in the cooked chicken and mix.
  7. Serve with warm tortillas and lime wedges.

INGREDIENTS
INSTRUCTIONS
  1. Clean the ribs nicely and rub some salt and let it stand for half an hour.
  2. In a Kadhaiadd crushed cinnamon, cloves, powdered spices and milk. To this mix add ribs and bring it to a boil. Cook on a low flame and let the ribs cook till it the milk has evaporated.
  3. Once the mixture thickens and looks like a sauce check for salt. Now on high flame cook so as to evaporate the liquid completely.
  4. Now if the ribs have enough fat then it should have a layer of fat in which the lamb keeps on frying.If the fat is less then you can add two tsp of ghee and continue frying till its golden brown.
  5. Serve it as a snack.
