Egg Paratha Recipe | HungryForever

Egg paratha is basically a flat bread recipe with egg mixture stuffing. Egg paratha here is made in such a way that can be served mainly for kids breakfast or lunch. 
INGREDIENTS
INSTRUCTIONS
  1. Knead wheat flour with just enough warm water. Add few drops of oil and knead again to make soft pliable dough. Cover and set aside for at least 20 minutes.
  2. Sprinkle flour on the rolling area and roll the paratha as shown in the pictures above.
  3. Heat a tawa or griddle until hot. Place the paratha and cook till golden spots appear on both the sides.
  4. Prepare eggs. Chop veggies finely. Break egg to a bowl, add veggies, salt, pepper powder and turmeric. Beat everything well until frothy.
  5. Heat the same pan with little oil, pour the egg and allow to cook on a medium flame.
  6. When the egg is almost cooked and little gooey on top, then place the paratha and press it gently.
  7. Flip and cook on the other side as well and cook till the egg is done on the edges as well.
  8. Serve egg paratha with chutney or vegetable salad.

Egg Thokku Recipe | HungryForever

Egg thokku is an easy and quick side dish that serves with chapati and rice. It tastes spicy and flavorful with spices, tomatoes, and tamarind.Today we will learn how to make flavorful egg thokku following this easy recipe. 
INGREDIENTS

Boil the eggs separately:
  1. In a saucepan place eggs and add water to cover the eggs. Add a pinch of salt and bring to a rolling boil. Turn off the heat and cover the pan with a lid and allow the eggs to sit in a hot water for 15 mins. Crack open and slice each egg in a half.
For making thokku:
  1. In a pan heat oil add mustard seeds and allow it to splutter. Add urad dal, fenugreek seeds and cook until the fenugreek seeds color changes to golden brown. Add curry leaves, chopped garlic and saute until the garlic color changes to golden brown.
  2. Add chopped onion and cook until the onion becomes soft. Add turmeric powder and cook until the turmeric powder loses its raw smell.
  3. Add chopped tomato, salt and cook until the tomatoes become soft and mushy (keep stirring in between to avoid the tomatoes getting burned.
  4. Add coriander powder, red chili powder and mix well. Cook until the spices lose its raw smell. Add tamarind paste, water and bring the mixture to a boil. Cook until the gravy becomes thick and the oil separates on top of a gravy.
  5. Add boiled eggs and mix gently. Cook the gravy over a low heat for five minutes and serve.

  1. Make slashed in eggs and set aside.
  2. Heat oil in a kadai. Add chilli, turmeric and garam masala powder. Add in boiled eggs and fry for 2 mins. Remove and set aside.
  3. Now in the same oil add onions and cook till golden.
  4. Add in ginger garlic paste and saute for a min.
  5. Add in tomato puree and cook till oil separates.
  6. Add salt and spice powders and mix well.
  7. Add in eggs and mx well.
  8. Add in water and simmer for a while. Add milk and mix well.
  9. Serve.
